Understanding matcha

Matcha is a finely ground powder made from specially cultivated and processed green tea leaves. Because the leaf itself is consumed, its quality depends closely on cultivation, harvest timing, and processing.

Traditional preparation involves whisking matcha with hot water using a bamboo whisk (chasen) until a light foam forms — a method still practiced in tea ceremony and everyday drinking alike.

Japanese Hojicha

Roasted for warmth and depth

Hojicha is a roasted Japanese green tea. Unlike matcha or sencha, its leaves are roasted at high temperature after processing, which changes their colour from green to a reddish-brown and transforms their flavour.

Roasting reduces bitterness and astringency, producing a tea with a toasty, warm aroma and a mellow, comforting character — distinct from the vegetal freshness of matcha.

Hojicha is traditionally enjoyed on its own, and is increasingly used in lattes, desserts, and other food and beverage applications where its roasted profile is valued.
